Creamy onion soup.

by the_moff @ 2008-03-19 - 23:07:45

For two people;

Fry four onions and some garlic in butter (add olive oil if there isn't enough butter) with mustard seeds and black onion seeds. When caramalised add water, some stock (I used vegetable because K is a vegetarian but I think beef may be nicest), a bay leaf, some thyme, some sage, some oregano, some white pepper and quite a bit of parsley. All of that is to taste. When it's cooked for a bit add some milk and then let it cook a bit more.

Sounds very nice. Did you have it with some crusty bread?

Hi! I'm alright, a bit insomniaish but alright. Sorry I took so long to reply. blog hasn't been telling me when people commented so I only noticed when I went to post today and was ambushed by the number.

Oh I hates insomnia. I get it every now and again. Yuck!

They go into curries. Dahl mostly but also aloo gobhi and Dad and I put it in Chilli (this horrifies K and E because they get a bit fanatival about Mexican food). If you wanted you could aquire some while in the UK, they sell them everywhere unless you happen to be in Edinburgh; there was an interesting saga about me finding anywhere that would sell them up here. They have the oddest hardest to find things everywhere but not things you would expect; the only place I could find Lemongrass was when i went on a trip to Oban.

Thanks Moff. I'm slowly learning about oriental spices and their uses.

I do know that Lemongrass we can get here at Chinese supermarkets. My Thai friend Suwan uses it in cooking.

Thanks again xx
